Vine leaves rolled thin between the fingers. Cabbage stuffed leaf by leaf. Kofta worked by hand, liver done the Alexandrian way, okra left to go soft in its own time. This is the cooking that takes a morning and feeds a family — the reason nobody makes mahshi on a Tuesday.
We make it the long way because there is no short one. Everything is cooked after you order it, never before.
